Tamales

Option 1: Steam
Place tamales in a steamer basket or double broiler over gently boiling water on the stove and cover for 30min.
Option 2: Sous Vide (or makeshift sous vide)
Use a pot large enough to submerge entire food-packed portion of the package and fill with water just to cover. Heat water to 200 degrees F, place vac-sealed package of tamales in water for 30 minutes.
Option 3: Chef Mike
Wrap tamales (still in husk) in wet paper towels and microwave till heated through.
Smoked Meats

Select a stock pot big enough to hold vac-sealed pack of meat, and fill with water just to cover. Bring to a low simmer (200 degrees F), and submerge meat until heated through (this will depend on quantity of meat).
Mac & Cheese
In pan: bake covered at 325 for 30 minutes, stirring once halfway through.
In deli container: crack lid, and either place in 200 degree F pot of water for 30 minutes, stirring occasionally, or microwave until heated through.
If heating in a sauce pot, add a splash of water and stir regularly.
